Instant noodles are everyone's favourite, no matter which company it belongs to. Many different flavours of instant noodles are available in the market like spicy masala flavour, tangy Tomato flavour, etc.

Companies keep making new flavours and experimenting keeping in mind every customer. Although instant noodles are made from all purpose flour, for health conscious people there is also the option of flour Maggi and I like the delicious flour noodles more than all purpose flour noodles. Instant noodles of different companies are famous in different countries. In America people like Top Ramen and Maruchan a lot, whereas in Britain pot noodles and Batchelor's super noodles are popular among people. In Japan, people love Nissin Top Ramen and Sapporo Ichiban. If we talk about India then 2 companies are very famous, first Nestle's Maggie and the other is Sunfeast yippee.
Instant noodles are prepared instantly and for people who have to satisfy their small hunger without doing anything in the kitchen, this is the best option, just warm the water and after that add the masala from the packet, add noodles and it is ready in 3 minutes. But today I am going to teach you a different method which is my personal favourite. This method takes a little more time but trust me, its result will amaze you. I call this method Desi style

Ingredients (for 2 serving)
- Cumin seed - a pinch of
- Bay leaf- 1
- Oil - 3 tablespoons
- Green Chillies - 4 (julian cut)
- 4-5 garlic cloves - Chopped
- Ginger - 1/2 inch chopped
- Medium size onions - 2 chopped
- Potato - 1 small ( chopped)
- Cauliflower - 1-2 floret
- Capsicum -1/2
- Sweet Corn - 1/4 Cup
- Carrot- 1/2 ( chopped)
- Turmeric powder- 1/2 tablespoons
- Red chilli powder-1/2 tablespoons or as your taste
- Tomatoes - 1 large (chopped)
- Salt - To taste
- Instant noodles - 70 gm( any brand you prefer)
- Coriander leaves - For garnishing
Step-by-Step Recipe
1. Heat oil in a pan
After heating the pan, add oil to it. When the oil is hot, add cumin seeds and bay leaves to it. Let them splutter and turn light golden brown. Add chopped chillies, garlic and ginger .After this, add cauliflower in the pan and fry it for 30-40 seconds on medium flame, then add potatoes and fry for another 30-40 seconds.Now add Onions, capsicum and carrot and fry again for 30 seconds.
Keep the flame on medium, if you feel that the water is getting less then you can add some more.
Turn off the flame , serve hot and enjoy.
Tip: Keep the noodles soupy, don't make them dry
2. Adding the Spices
Now add turmeric powder, red chilli powder and chopped tomatoes in the pan and fry for 40 seconds.3. Cook the noodles
Now add 1 ½ cup of water in the pan and cover the pan and leave it till the water boils. After the water boils, put instant noodles , sachet masala in it and salt also and cover it and leave it for 3-4 minutes.Keep the flame on medium, if you feel that the water is getting less then you can add some more.
4. Final process
Check whether the noodles are cooked well or not, take one noodle and press it gently with your fingers, if it breaks easily then the noodles are cooked well, now garnish it by adding coriander. And now your delicious desi style noodles are ready.Turn off the flame , serve hot and enjoy.
Tip: Keep the noodles soupy, don't make them dry
Tips for Perfect Vegetarian Noodles
Stick to the ratio – 1 ½ cups water works best for one packet.
Don’t overcook – Mushy noodles don't taste good.
Flavor lift – You can add crushed black pepper in it.
Make More Healthier – Use flour noodles instead of all purpose flour noodles .You can also add other types of veggies like sweet corn, peas, beans etc to make this dish more healthy.
Serving Suggestion
1. Raw Chopped Onions and lemon juice: You can add raw chopped onion and lemon extract over it, this enhances the taste of the noodles.2. Add Ketchups: You can also serve it by adding tomato ketchup and chilli sauce.
3. You can also add raw Chopped cabbage if you like cabbages.
Simple Variations
If you’re in the mood for a change but want to keep it vegetarian, then try:
Cheesy noodles – Stir in a cube of processed cheese while hot.
Butter masala noodles – Mix a small dollop of butter or ghee at the end.

People feel that instant noodles are not healthy. But today we have learnt how instant noodles can be made into a more delicious and healthy food.
